I couldn't figure out how to make this one work, but I have to admit I didn't dig into the documentation at all. (Real men don't read instructions.) In my impatience, I just opened my wallet and went with a "shareware" application that had a simple intuitive interface that worked the first time I tried the demo.

Great piece of software. Does exactly what it has to do: convert scanned images of text to text in a Word or ascii readable format... It even has a dictionary. And for free!
